My uncle on my mother’s side is originally from Mexico, and now live in Chicago. Each summer (and some holidays) we go up north to visit them and have a wonderful time seeing the sights of downtown Chicago and Lake Michigan. While we are there, Tita and Papa, my great aunt and uncle, make us delicious spanish breakfast. Eggs mixed with hot sauce and salsa eaten on corn tortillas. I don’t think a better dish exists in the entire world.
